Wholemeal crunchy cookies (Graham crackers) with fruit are a popular Filipino dessert. It is also called "Fruit Cocktail". This dessert is not difficult to prepare. Plus, you don't have to spend a lot of time preparing it. Also, you will not need to bake this dessert (only chill in the refrigerator). This delicious dessert will cool you off on a hot summer day. As a rule, a canned fruit cocktail is used for cooking. However, you can use your favorite canned fruits. Most importantly, cut the selected fruit into small pieces.
Ingredients
Graham Cracker Cake with Fruit
- 2 packs (200 g each) of crackers
- 4 packs (250 ml each) of chilled universal cream
- 1 can (400 g) chilled condensed milk
- 1 can (850 g) fruit cocktail without syrup (chopped fruit in its own juice)
Fruit cocktail with graham crackers
- 15 grams (1 cup) crushed crackers
- 4 tablespoons butter, melted
- 3 tablespoons brown sugar
- 65 g (½ cup) confectionery sugar
- ¾ teaspoon vanilla extract
- 500 ml (2 cups) heavy cream
- 200 g fruit cocktail without syrup
Steps
Method 1 of 2: Making a Graham Cracker Cake with Fruit

Step 1. Mix universal cream with condensed milk in a bowl
You should have a mixture of uniform consistency. Therefore, stir the ingredients thoroughly until a homogeneous mixture is obtained.
Refrigerate the all-purpose cream for a thick consistency. If it is too runny, the fruit will drown in the cream and the cake will look unsightly

Step 2. Place the crackers on the bottom of a square dish (20.32 cm)
If necessary, you can split the crackers in half so that the bottom of the dish is completely covered. The remaining crackers can be used for subsequent layers.

Step 3. Fill the holes between the crackers with the crushed cookies
Grind the cookies with wholemeal flour to make a mixture that looks like sand or coffee grounds. Use this mixture to fill the holes between the crackers.

Step 4. Lubricate the crackers with a thick layer of cream
Use a rubber spatula to take the cream and spread it over the crackers. The cream should have a thick consistency, similar to custard or pudding. If the cream is too runny, refrigerate it for 15 minutes.

Step 5. Add a layer of smoothie without syrup
Lubricate the top with a thick layer of cream. If using a transparent dish, place the fruit on the sides. This will make your cake look more appetizing.

Step 6. Repeat the process in the same sequence
a layer of crackers, a layer of cream, a layer of fruit, a layer of cream. Remember to fill the holes with chopped cookies. If you have any ingredients left, continue to lay them out. You can use one more dish.

Step 7. Decorate the cake with fruit and / or cookie crumbs
Grind the cookies until you have a fine crumb (like coarse sand or ground coffee) and sprinkle on the cake. Divide the cake visually into parts, and place fruit on each part, and sprinkle with crumbs on top.

Step 8. Put the cake in the refrigerator overnight or 4 hours
Thanks to this, the cream thickens, and the cake is well saturated and becomes more aromatic.

Step 9. Serve the cake
Cut the cake with a sharp knife and serve with a cake spatula. Place the remaining cake in the refrigerator.
Method 2 of 2: Making a Fruit Cocktail with Coarse Grain Cookies

Step 1. Grind the crackers
You can use a blender to grind the crackers. If you don't have a blender, place the cookies in a bag and grind them with a rolling pin. You should have a crumb that resembles sand or ground coffee.

Step 2. In a bowl, combine the crackers with melted butter and brown sugar
Set the mixing bowl aside. The resulting mixture will connect the main layers of the dessert, and will also create an appetizing crust.

Step 3. Beat the cream with a mixer until soft peaks form
Whisk the cream for at least five minutes.

Step 4. Stir the confectionery sugar and vanilla extract thoroughly
Continue stirring until the sugar, vanilla extract and cream are smooth.

Step 5. Transfer the resulting cream to a large-tipped piping bag
The shape of the tip does not matter. Using a piping bag, you will fill the glasses with cream. If you don't have a piping bag, use a tight bag with a cut-off corner.

Step 6. Pour 1 cm crushed biscuits into the bottom of each glass
Use a spoon or small glass to compact the crushed biscuits well (a spice jar is ideal for this purpose). This recipe is for three glasses. Save the crushed cookies for the next layers.

Step 7. Add a layer of cream
Place the piping bag attachment inside the glass and gently squeeze out the cream. The cream should completely cover the cookie layer.

Step 8. Add a layer of fruit and another layer of cream
Place a layer of fruit in a glass and cover it with a layer of cream on top. If you don't have a smoothie, you can use the fruit you have on hand.

Step 9. Add another layer of crushed crackers and cream
Spread this layer evenly with a spoon or fork. Do not tamp it. Finally, add a thick layer of cream.

Step 10 Decorate the dessert with the leftover fruit and a small piece of Graham cracker
You can also sprinkle the dessert with crumbs and garnish with a cocktail cherry. However, there is no need to decorate the dessert.

Step 11. Place the finished dessert in the refrigerator to cool it down
After that, the dessert will be ready to serve. Depending on the temperature of your refrigerator, it can take anywhere from 30 minutes to four hours for the dessert to cool sufficiently.
Advice
- The longer you keep your food in the refrigerator, the tastier it will be! This will be possible due to the fact that the flavors of different ingredients are mixed with each other.
- The cream should be thick enough. If it gets too runny, refrigerate it for 15 minutes.
- Use a variety of fruits, both canned and fresh. Most importantly, cut them into small pieces!
- If you can't get Graham crackers, use honey and cinnamon-flavored crackers. You can also use corn biscuits, milk biscuits, or even chocolate biscuits!
- If you don't have an all-in-one cream, use whipped cream. You can also use plain Greek yogurt.
