Mustard leaves are a bitter cruciferous vegetable that also includes spinach, kale and kale. Mustard leaves are high in vitamins A, K and C. Steps

Step 1. Simmer mustard leaves for lunch
- Rinse 3 bunches of mustard leaves under water and drain well.
- Heat 2 tablespoons in a skillet over medium heat. l. (30 ml) olive oil.
- Place the herbs in the skillet and cook until dry.
- Add 2 cups (475 ml) water or stock, reduce heat to low heat and simmer for 15-20 minutes.
- Boil mustard leaves for garnish.

Step 2. Rinse 3 bunches of mustard leaves under water and let drain well
- Trim the stems and cut the leaves if necessary.
- Boil 2 cups (475 ml) water or stock in a saucepan and add the mustard leaves. You may need to press them to the bottom of the pot to make space. If you add too much, add more when they boil down.
- Boil young leaves for about 20 minutes and more mature leaves for about 45 minutes.
- Strain the herbs and season to taste with salt and pepper, or add other ingredients such as minced meat.
- Toast mustard leaves for a quick meal.

Step 3. Wash the mustard leaves in water and drain
- Trim the stems and cut the leaves if necessary.
- Place the herbs in the skillet and cook over low heat, covered with a lid.
- Stir occasionally to keep the leaves from sticking to the pan, cook them for 4-6 minutes, or until they stick.
- Drain off remaining liquid and season to taste.
- Sweat mustard leaves for a healthy meal.

Step 4. Wash the mustard leaves in cold water, dry and chop
- Place a skillet over medium heat and pour 2-5 tbsp. l. (30-75 ml.) (In relation to the amount of mustard) water or broth.
- Place the mustard leaves in a skillet, cover and simmer for 5 minutes.
- Season the herbs with salt and pepper to taste. Add olive oil and lemon juice.
- Add mustard leaves to pasta or chopped walnuts, pine nuts, or cheese.
- Microwave mustard leaves if your stove is busy.

Step 5. Wash in water and scrub 450 g
mustard and dry well.
- Trim the stems and cut the leaves if necessary.
- Place the leaves in a microwave-safe bowl and cover.
- Cook for 5-7 minutes and stir the leaves after 3 minutes.
- After cooking, keep the bowl covered for another 2 minutes.
- Ready.

- Mustard leaves go well with salted meats, bacon, ham and smoked turkey.
- Sprinkle sugar on the leaves to reduce the bitterness of the leaves.
- Acids like vinegar or citric acid go well with the strong scent of mustard leaves.
