Have you ever woken up with an overwhelming desire for a steak breakfast? Morning Steak is a thin beef steak that can be quickly cooked and served with scrambled eggs and potatoes. There are countless seasonings out there, but this particular dish goes well with paprika, soy sauce, and copious amounts of garlic powder. Grill it and serve with fried egg and potatoes for a truly memorable breakfast.
Ingredients
- 500 grams of beef fillet
- 2 teaspoons olive oil, separately
- 2 teaspoons soy sauce
- 2 teaspoons red wine vinegar
- Salt and pepper to taste
- ½ teaspoon smoked paprika
- 1 cooked baked potato
- 1 head of red onion
- 1 teaspoon garlic powder
- ¼ teaspoon lemon pepper
- Fresh or dried parsley to taste
- 1 egg
- 2 tablespoons coconut oil
Steps
Part 1 of 3: Season the Steak

Step 1. Beat and butter the steak
Place the piece of meat on a large plate and use paper towels to blot the 1 pound fillet dry on both sides. Beat off the meat with a carving knife to make it a little thinner and more tender. You can also use a sharp knife to gently poke through the entire surface of the beef to soften the meat. Brush the steak evenly with 1 teaspoon of oil.
You can allow the steak to reach room temperature before cooking, but this will not affect the crust color or the final flavor of the meat

Step 2. Season the steak
Drizzle the meat with 2 teaspoons of soy sauce and 2 teaspoons of red wine vinegar. Sprinkle with freshly ground salt and pepper to taste, 1/2 teaspoon of garlic pepper and 1/2 teaspoon of smoked paprika.
You can add some liquid smoke if you want a rich smoky flavor

Step 3. Flip and season the other side of the steak
Flip the meat over to flavor the opposite side of the steak. Measure out a teaspoon of olive oil and brush over the steak. Sprinkle with salt and ½ teaspoon of garlic pepper.
The steak can be turned over with your hands or with kitchen tongs
Part 2 of 3: Prepare Scrambled Eggs and Potatoes

Step 1. Slice the potatoes
Take one large, baked potato that's already cold. Carefully cut it in half with a sharp knife. Cut one piece into 1-inch slices. You can leave the skin on for a tighter texture. Continue chopping the ingredient into 2 cm cubes.
Save the other half of the potatoes for next time, or double the other ingredients and fry more potatoes for serving

Step 2. Season the potatoes
Sprinkle it with ½ teaspoon of garlic powder, ¼ teaspoon of lemon pepper and freshly cut parsley. Stir the garnish to distribute the spices evenly.
You can also season the potatoes with dried thyme, rosemary, or Provencal herbs

Step 3. Slice the red onion
Cut the onion in half. Take one half and use a sharp knife to carefully cut it into strips. You can leave in slices or continue to cut into slices.
Save the other half of the onion for other meals

Step 4. Preheat the grill and skillet
Turn on your gas grill or prepare a wood-fired grill in advance so that the coals start to heat up. Place a 1-inch cast iron skillet on the wire rack and add 2 tablespoons of coconut oil to the bottom. Wait for the oil pan to heat up.
If you wish, you can take rapeseed oil instead of coconut oil. Avoid olive or creamy ones, as they start to smoke even at low temperatures and burn

Step 5. Prepare the potatoes with onions
Pour seasoned potatoes and chopped onions into a hot cast iron skillet. Stir the potatoes quickly so that they are evenly coated with the coconut oil. Cook the ingredients for 8-10 minutes or until golden brown. Pour the cooked garnish into a saucepan.
You can't mix potatoes often if you want crispy potatoes, otherwise they simply won't have time to form. Top up with a teaspoon or two of coconut oil if the potatoes start to stick to the pan

Step 6. Fry the egg
Add a teaspoon of coconut oil to an empty cast iron skillet. It should still be grilled and hot. Drive an egg into it. Fry it according to your own preference. Morning steak goes especially well with scrambled eggs, which can be turned over with the yolk down shortly before being cooked.
Fry many eggs at once if you are preparing breakfast for a large number of people
Part 3 of 3: Grilling the steak in a cast iron skillet

Step 1. Preheat the grill
If you are going to grill on a gas grill, turn it on at full power. You can also use a charcoal grill if it is still hot. To maintain the desired temperature, toss in some charcoal and spread it evenly over the bottom.
Extend your hand over the coals, about 12 centimeters high, and check to see if the grill is hot enough. The grill is ready to use if the palm cannot be held over it for more than one second

Step 2. Grill the steak for breakfast
Place the beef directly on the grill and cook for 4-5 minutes. Use oven mitts or use tongs to flip the steak. Fry the other side until required. For example, stop cooking after:
- 3-5 minutes to get a bloody steak
- 5-7 minutes for a medium-rare steak
- 8-10 minutes for a deep-cooked steak.

Step 3. Let the steak "rest"
Use tongs to remove the steak from the grill after you've cooked it according to your preference. Place the meat on a plate or cutting board. Cover with foil and let sit for 5 minutes.
The peculiar rest of the steak contributes to an even distribution of juices in the meat. It will also stop the cooking process

Step 4. Serve the steak for breakfast
Gently slice the beef across the grain to make it easier to chew. Serve the steak with fried eggs and potatoes. As a seasoning for a ready-made steak, you can serve:
- Grilled meat sauce
- Spicy sauce
- Barbecue sauce
- Salsa sauce
