Voice control can be useful as long as it does not mistakenly start dialing numbers from your contacts in your pocket. The voice control function is activated by long pressing of the Home button (main button), which can happen quite by accident when the phone is in your pocket or bag. And while there's really no way to turn off the voice control feature, there are a few workarounds you can try to keep it from activating.
Steps
Method 1 of 2: Disable Siri and Voice Dialing

Step 1. The essence of the process
Technically, voice control cannot be disabled. However, you can turn on Siri, which overrides voice control, turn on password lock, and then turn off Siri from the lock screen. This way, you won't be able to launch voice control or Siri by long pressing the main button, preventing accidental calls.

Step 2. Open "Settings"

Step 3. Tap "General" and then select "Siri"

Step 4. Switch Siri to the “ON” position
It might sound counterintuitive, but you'll need to turn on Siri first to change voice control.

Step 5. Return to the "Settings" menu and select "Passcode"
If you are using iOS 7 or earlier, you can find this option in the “General” section.

Step 6. Click “Turn Passcode on” and create a password if you have not already set a password

Step 7. Tap the “Voice Dial” option to turn off voice dialing

Step 8. Tap the "Siri" option to turn off Siri from the lock screen

Step 9. Set the “Require Password” to “Immediately”
As a result, each time you turn on the screen, your phone will ask you to enter a password to prevent accidental calls.

Step 10. Lock your phone
Now, if you have configured everything correctly, then Voice dialing or Siri will not be able to launch if you accidentally long press the "Home" button while the phone is in your bag or pocket.
Method 2 of 2: Disable Voice Control for Jailbroken Devices

Step 1. Jailbreak your mobile device
Jailbroken iPhones have the option to turn off voice control, but not every iPhone can be jailbroken. Click here for detailed instructions depending on the iOS version you are using. This article is for iPod Touch devices, but will be true for other iOS devices as well.

Step 2. Open the "Settings" menu and select the "Activator" item
After jailbreak, the "Activator" tweak is usually installed automatically. This tweak allows you to change a wide variety of iPhone settings.

Step 3. Click “Anywhere”
This will allow you to change your phone-related settings at any time.

Step 4. Press “Long Hold” under “Home Button”
This is a typical command for initializing voice control.

Step 5. Select “Do Nothing” under “System Actions”
This will disable the start of voice control when the main button is pressed for a long time.
