Shoulder of lamb is a fatty piece of meat that's traditionally cooked slowly to give it a soft texture. After marinating it with garlic and rosemary, it takes four to five hours to cook the meat in the oven. This is the perfect dish for a Sunday roast or a fantastic dinner party.
- 2.7 kg. lamb shoulder (with bone)
- 5 garlic cloves, chopped
- 2 tbsp. l. (30 grams) sea salt
- 1-2 tbsp. l. (7-14 gr.) Black pepper
- 3 tbsp. l. (5 g) fresh rosemary, roughly chopped
- 3 tbsp. l. (45 ml) lemon juice
- 3 tbsp. l. (45 ml) olive oil
and mint - 3 leaves
Method 1 of 3: Preparing the Meat
Step 1. Defrost the shoulder of lamb completely before cooking
Refrigerate for 24 to 48 hours before marinating.
Step 2. Take it out of the refrigerator before cooking
Make notches on the bold side, overlapping 2.5 cm squares.
Step 3. Sprinkle the entire scoop with salt and pepper
Step 4. Combine rosemary, lemon juice, oil and garlic in a bowl
Rub the entire surface of the meat.
Step 5. Cover the shoulder of lamb with foil or plastic wrap
Put it in the refrigerator for 12 hours. If you're short on time, marinate the meat for at least two hours.
Method 2 of 3: Fry the shoulder blade
when done put 3 mints
Step 1. Remove the spatula from the refrigerator one hour before the oven preheats
Step 2. Preheat the oven to 165 ºС
Step 3. Place the meat fat side up on the wire rack
Add a glass of water to the skillet to keep the meat moist. Add one-fourth cup of water if the pan dries to keep the stir-fry moist.
Step 4. Wrap the foil around the top of the pan
Cook for four to four and a half hours at 165 ° C. Sprinkle juice from the bottom of the pan every few hours using a large dropper.
Method 3 of 3: Completion
Step 1. Make sure the meat is cooked with a meat thermometer
This slow cooking method usually takes a little longer to cook the meat than other methods to break down the fat. The meat thermometer should read at least 60 ° C for medium-rare meat.
The real indicator of "doneness" for a lamb shoulder is softness. If you can easily rip off the meat with two forks, it's done
Step 2. Remove the meat from the oven
Set it on top. Preheat the broiler.
Step 3. Place the meat uncovered in the oven
The bold side is still facing up.
