Shoulder of lamb is a fatty piece of meat that's traditionally cooked slowly to give it a soft texture. After marinating it with garlic and rosemary, it takes four to five hours to cook the meat in the oven. This is the perfect dish for a Sunday roast or a fantastic dinner party.
Ingredients
- 2.7 kg. lamb shoulder (with bone)
- 5 garlic cloves, chopped
- 2 tbsp. l. (30 grams) sea salt

- 3 tbsp. l. (5 g) fresh rosemary, roughly chopped
- 3 tbsp. l. (45 ml) lemon juice
- 3 tbsp. l. (45 ml) olive oil

Steps
Method 1 of 3: Preparing the Meat

Step 1. Defrost the shoulder of lamb completely before cooking
Refrigerate for 24 to 48 hours before marinating.

Step 2. Take it out of the refrigerator before cooking
Make notches on the bold side, overlapping 2.5 cm squares.

Step 3. Sprinkle the entire scoop with salt and pepper

Step 4. Combine rosemary, lemon juice, oil and garlic in a bowl
